Slice cauliflowers starting at the stem, down the centre to make 2 “steaks” from each head. (*reserve loose florets for another use or triple the breading recipe and make into cauliflower nuggets)In a large shallow dish, mix parmesan, panko, herbes de Provence, garlic powder, onion powder, salt and pepper. In another shallow dish, whisk eggs. Dredge cauliflower steaks in egg using a pastry brush to help coat. Shake off excess and place in breading mix, sprinkling and turning to coat evenly.Place on a large parchment lined baking sheet and bake in preheated oven at 400F for 15 minutes. Spread each with marinara sauce and sprinkle evenly with mozzarella cheese. Bake further 10 minutes or until golden brown. Garnish with fresh basil and season with salt and pepper to taste.
