In a large pot, sauté the onion and garlic in butter for 1 minute.Add the white wine, bouquet garni and season.Once the liquid is simmering gently, add the mussels, cover and raise the heat. Cook from 5 to 7 minutesStir frequently during cooking. Before serving, remove the bouquet garni and sprinkle with cut up parsley.
