Preparation
Cook the turkey as per package instructions: DO NOT DEFROST BEFORE COOKING. Preheat the oven to 350 °F (175 °C). Remove the frozen turkey from its packaging. Place it in an enamelled roasting pan, ideally one with a grill and a lid (otherwise cover in aluminum foil). Cook for 5 to 6 hours or to an internal temperature of 85 °C (185 °F). Carefully remove the turkey from the roasting pan. Cooking a frozen turkey releases a large quantity of liquid; set it aside for the recipe.
Debone the turkey once its temperature is tolerable. Remove the turkey breast meat and refrigerate it. Tip: make turkey club sandwiches or a turkey vol-au-vent.
Delicately pull the meat from the turkey legs and set it aside.
Pour the olive oil into a large pot and heat it over medium-high heat. Add the finely chopped onion and sweat it without colouring it. Season.
Deglaze with the apple cider vinegar, adding the brown sugar to melt it. Then add the soya sauce and the ketchup, plus some of the turkey stock if needed. Let cook for a minute, and then add the pulled turkey meat.
Coat the meat in sauce well, making sure that the sauce has thickened sufficiently. Season to taste and set aside.
Heat the hamburger buns in the oven at 350 °F (175 °C) for about 30 seconds, open them and place a slice of provolone both on the top and bottom buns.
Place a heaping potion of pulled turkey on the bottom buns, plus two lettuce leaves topped with a dash of hot sauce, to your liking. Enjoy!
