Preheat barbecue to high heat.Put the skirt steak into a resealable plastic bag and add the shallots, wine, honey, salt and pepper into it.Marinate for at least 30 minutes in the refrigerator.Place all asparagus ingredients in a foil packet and top it with butter pieces and bread crumbs.Seal and grill for approximately 10 minutes.Grill skirt steak for 3–4 minutes on each side for medium-rare doneness (or 2–3 minutes if steak is thin).Cover with foil and let it rest.Tip:Reserve marinade to use as steak sauce.In a small saucepan, bring marinade to a boil and reduce for 7–8 minutes.

    honey

  • salt and pepper
  • 1 lb
    (454 g)
    skirt steak
  • asparagus:

  • 1
    bunch of asparagus, ends cut

  • Juice and zest of 1 lemon
  • 1
    clove garlic
  • 2 Tbsp.
    (30 mL)
    Parmesan cheese

  • dash of olive oil

  • salt and pepper
  • 1 Tbsp.
    (15 ml)
    butter, in pieces
  • 1/4 cup
    (60 mL)
    Panko bread crumbs

Preparation
