Preheat the oven at 375° F.
To prepare the dough; combine the flour and the salt in a bowl.
Slowly add the butter and continue to mix.
Add the egg and the milk.
Stir until the dough is formed
Roll out on a lightly floured surface and place the rolled dough in a quiche dish. Reserve.
In a skillet over medium heat, brown the lardon and cook the onion.
When they are cooked, remove the skillet from the heat and let cool.
Make sure you drain the cooking fat.
In a bowl, whisk the eggs with the cream.
Add the onion, the lardon, the Gruyère and nutmeg.
Season with salt and pepper.
Pour the mixture in the dough. Bake in the oven for 45 minutes.
Remove from the heat and let cool before serving.
