Five Pasta Recipes—Without the Pasta

1SPAGHETTI SQUASH AU GRATIN
Main ingredient:
spaghetti squash
Other ingredients:
35% cream + Gruyère and Parmesan cheese + garlic (finely chopped) + breadcrumbs
How to turn squash into pasta:
Using a knife, pierce the squash in three or four places to allow steam to escape during cooking. Microwave 10 minutes on maximum. Let stand 10 minutes, then cut into two halves. Scrape the flesh out from the squash.
2GREEK-STYLE ZUCCHINI NOODLES
Main ingredient:
zucchini
Other ingredients:
olive oil + fresh tomatoes (diced) + green onion (chopped) + feta cheese + lemon juice
How to turn zucchini into pasta:
Start by cutting the zucchini into spaghetti-like strips using a spiral slicer. Blanch in salted boiling water for 2 minutes. Drain well.
3CAULIFLOWER LASAGNA
Main ingredient:
cauliflower
Other ingredients:
eggs + meat sauce + cottage cheese + grated cheese
How to turn cauliflower into pasta:
Boil the cauliflower in salted boiling water until tender. Chop the boiled cauliflower into tiny pieces (1–2 mm) using a food processor. Mix in two eggs, salt and pepper. Spread the mixture over a baking sheet covered with parchment paper. Let dry for 15 minutes in the oven, then cut into strips.
4ASIAN-STYLE CARROT NOODLES
Main ingredient:
carrots
Other ingredients:
garlic + onion (chopped) + sesame oil + soy sauce + sesame seeds
How to turn carrots into pasta:
Using a spiral slicer, cut the carrots into spaghetti-like strips (use large carrots), then blanch in salted boiling water for 2–3 minutes. Drain well.
5SWEET POTATO NOODLES
Main ingredient:
sweet potatoes
Other ingredients:
pesto + sautéed shrimp + pepper
How to turn sweet potatoes into pasta:
Using a mandoline slicer with a julienne blade, cut the sweet potatoes into linguine-size noodles. Blanch the sweet potatoes in salted boiling water for approximately 2 minutes. Drain.
